Layered Banana Bread Toast
When you’re in quarantine and baking banana bread becomes a weekly activity, you suddenly wonder what to do with all of that damn banana bread! This recipe is one of a series called Banana Bread Five Ways, full of creative, easy ways to make more of your quarantine baking.
This is obviously the easiest way to ever enjoy banana bread. After a day or two of it sitting out, there’s nothing quite like adding a thick slice of banana bread in the toaster, topping it with your favorite spread, and enjoying it on the go.
I’m sharing the best way to layer your toast, of course highlighting my personal favorite: peanut butter!
Layered Banana Bread Toast
Suggested Spreads:
Peanut Butter (Trader Joe’s is my favorite!)
Tahini
Cookie Butter
Any nut butter, honestly
Salted butter
Mascarpone cheese
Yogurt (Noosa is my favorite!)
For Freshness:
Blueberries
Blackberries
Diced strawberries
Sliced apricots (fresh or dried)
Thinly sliced apples
Sliced peaches
Drizzle on Top:
Honey, regular or specialty, like hot honey or date honey
Maple Syrup
For Crunch/SPRINKLING:
Sesame seeds
Banana bread granola
Flaky sea salt
Hemp hearts (packs so many nutrients!)
Salted peanuts, or really any crunchy + toasty chopped nuts
Toasted pumpkin seeds
Assembly:
Slice banana bread and toast in oven (350F until lightly browned) or directly into a pop-up toaster for 1-2 minutes. Layer toppings in the order listed above: spreads, freshness, drizzle, crunch! The perfect on-the-go snack. You’ve got this!
